Summer Foraging with Mark Williams from Galloway Wild Food

Near Kirkudbright. Guided forest, hedgerow and coastal foraging walk especially tailored to Outdoor Learning Practitioners working in the Glasgow region. In a spectacular coastal area near Kirkcudbright, SW Scotland, you will explore summer hedgerow plants, coastal succulent plants and maritime herbs, fungi and seaweeds. You will learn about finding, identification, poisonous lookalikes, mindful harvesting, expert tips, folklore/traditional uses, modern gourmet/medicinal uses, nutrition, processing, recipes and cooking tips.
Mark Williams runs Galloway Wild Foods and is a consultant on foraged ingredients with food and drinks companies, working closely with chefs, nutritionists and herbalists to explore the possibilities of our wild larder and writing regularly on foraging for national press. All his work seeks to restore the vital connection between humans and nature, restoring us as keystone species, sensitive to the web of life of which we are part.
Mark will bring lovingly prepared treats, tasters and tipples to share during the walk. These are both delicious and educational, and the walk is like a guided grazing. We will make a cocktail of the plants we encounter and drink it in a beautiful spot. The day will end with a cook-in for us to learn how to cook our foraged feast and digest the afternoon’s discoveries.
Expect: Gentle walking on well made paths for about 3.5 hours, with some off-path exploration and some walking on rocky shore, followed by and informal al-fresco cook-in of our finds. There will be wild treats and tasters to enjoy throughout.

Bring: Stout footwear, waterproofs, water. Your learning and enjoyment may also benefit from bringing a camera, notebook, field guide (plants) and a small basket/cloth bag. If you make any foraged delights you wish to share with the group, please bring them along!
